MSG was discovered in 1907 when the Japanese biochemist named Kikunae Ideda became curious about some of the flavors in his wife's cooking. After some tasting, he discovered that certain foods, including mushrooms, tomatoes, asparagus, cheeses, and meats had some enhanced flavors. He took his findings from home to work, and discovered that glutamates were the common denominator in these foods. He called this taste umami. He was able to isolate the chemical l-glutamate, and turned it into a product now called MSG. Glutamic acid is a naturally occurring amino acid that breaks down into (monosodium) l-glutamate. It was found in all of the foods the professor was testing, and is created by many types of cooking processes!
